Bistek is one of my husband’s favorite dishes. It consists of small pieces of beef meat marinated in calamansi and soy sauce. The trick here is to achieve the right balance of sourness and saltiness. For this recipe, I use pork instead of beef. I chose tenderloin (lomo) because it is very tender and thus, easily cooked. It is more expensive than the other cuts but it is worth it.
To cook pork bistek you would need:
1/2 k tenderloin cut into strips
1 big potato sliced thinly
1 big onion
1/2 garlic, minced
10 pcs calamansi
1/8 cup soy sauce
How to cook:
Marinate pork in calamansi, soy sauce, and garlic. Refrigerate for 30 minutes. In a wok, pan fry onion lightly. Remove and put aside in a plate. Next, fry the potatoes until brown. Set aside.
Remove pork from marinade and drain. Fry the pork for a few minutes. Add the marinade and simmer till the meat is tender and cooked. Put into plate and top with potatoes and onion.
